Taking Locally Grown to New Heights
Here at The Observatory, we are dedicated to providing you with the best in seasonal and sustainable cuisine. And, we are continually looking for new opportunities to source local produce that can be incorporated in our menus.
This summer you may have noticed some new planters on Altitudes Patio growing a variety of greens. Our chefs can regularly be seen out harvesting herbs, kales and lettuces that they incorporate in a number of the dishes on our current menu. There’s nothing fresher than enjoying a salad picked just minutes before it reaches your table.
These gardens are just one of the ways that we are working to produce our own ingredients on the Mountain. We have also used honey from our own beehives in some of our menu items. In the future we hope to incorporate more ingredients from our Mountain as well as continue to cultivated relationships with local suppliers and micro-producers dedicated to sustainable practices.
